A halloumi feast πŸ˜

This is a dish to stay away from if you’re trying to diet! It’s a potato and halloumi feast 😍

To make this you will need:

– 1/2 an onion

– 1 leek

– 2 carrots

– Handful of baby tomatoes

– 1 pack of halloumi

– 2 potatoes

– Oregano 3 tsp

– Smoked paprika 1tsp

– Cayenne pepper 1tsp

However many sausages you wish! (If you can’t find any gluten free sausages then don’t worry as this would taste just as good without them!)

Chop the onion, leeks and carrots and throw into the pan to fry. Add in the oregano, smoked paprika and cayenne pepper. Once they have begun to soften add the sausages and tomatoes.

At this stage you can put your potatoes onto boil (boil for 5-10 minutes so that they’re soft but will still hold their shape when cut into).

Once the sausages have cooked transfer the contents of the pan into a baking dish.

Once the potatoes have softened slice them and layer them on top of the sausages and vegetables.

At this stage I then sprinkled a pinch of oregano, paprika, salt and pepper over the top of the potatoes. (If you wanted to be extra naughty you could add a few blobs of butter!)

Then cover the dish with tin foil and place in an oven (on gas mark 6(ish)) for 30 minutes (the potatoes may take longer). Once the potatoes have completely softened remove the foil and allow to crisp up.

Once the potatoes have become all crispy layer the halloumi on top and add some more oregano. At this stage I placed the dish in a halogen oven but a grill will do the same job!

I will definitely be making this dish again, it was yummy πŸ™‚ It’ll be perfect for next winter with a nice glass of red wine 😍
