Cheese me up vegetarian and gluten free lasagne 😍

My specialities include both a quorn mince lasagna and a vegetable one. Today’s is made with quorn mince. I had planned on blogging my vegetable one, however when my boyfriend heard I was planning lasagna he begged for quorn mince. So here is my recipe for a gluten free quorn mince lasagna.

In order to make this you will need:

  • Half an onion
  • 4 garlic cloves
  • 2 carrots
  • 1 pepper
  • 100g spinach
  • Bag of quorn mince
  • 390g Passata (this is approximate, a little less or more will be fine!)
  • Oregano
  • Rosemary
  • Cayenne pepper
  • Smoked paprika

Fry the onion in a tbsp of oil until it begins to brown. Once softened add the garlic and vegetables and continue to fry until soft. At this point add a tsp of oregano and rosemary.

Add the quorn mince and fry for 10 minutes (you may need to add a little more oil at this stage). Then add the passata followed by a cup of boiling water with a tsp of smoked paprika and cayenne pepper mixed in. Also add in the spinach and turn carefully allowing it to wilt.

Turn the heat down and allow the mixture to simmer whilst you make the cheese sauce.

To make the cheese sauce you need:

  • 2 Tbsp butter
  • 2 Tbsp gluten free flour
  • 1 pint of milk
  • Cheese
  • Salt & pepper
  • Mustard powder

Melted the butter in a saucepan on a medium heat, then add the flour and mix together.

Add the milk and whisk until the floury mixture has dissolved. Add in salt, pepper and mustard flour (I add 2 tsp but I like it very mustardy as I use mild cheese!).

Keep whisking on a medium heat until the sauce begins to thicken. Once thickened take the sauce off of the heat and add the cheese, stirring to melt it in.

Boil a kettle and fill a bowl with boiling water then place the gluten free lasagna sheets in the water to soften.

Spoon a layer of mince into a dish and then top with softened lasagna sheets.

Add another layer of mince followed by a layer of lasagna sheets.

Then pour the cheese sauce on top and sprinkle with oregano and pepper.

Cover the dish in foil and place in the oven on gas mark 6 for an hour.

After an hour take the dish out of the oven and remove the foil. I then topped the lasagna with mozzarella and placed it back into the oven to melt.

I can honestly say that this is the best lasagna I have ever had! I hope you enjoy it as much as we do! ☺️
