Spicy Vegan burgers! (Gluten Free)

I used to make burgers all the time when I was at university but for some reason they dropped off my regular meals and I haven’t made them for ages!

So tonight I decided we would have them for dinner.

I would say this recipe is perfect for two people. You will need:

  • 1 Can of Cannellini beans
  • 1 Pepper
  • 1 Carrot
  • 1 Onion
  • Vegetable oil
  • Tomato puree
  • Garlic puree
  • Mixed herb
  • Cayenne Pepper
  • Chilli flakes
  • Oregano
  • Salt and pepper
  • Gluten free flour

Grate the carrot and finely chop the pepper.

Add 1 tablespoon of vegetable oil to a frying pan and allow to heat before adding the onion, carrot and pepper. Then add 1 teaspoon of oregano and 1 teaspoon of garlic puree.

Fry together until the pepper and onion have softened. Then take off of the heat and place to one side.

I like to rinse my cennellini beans as I’m not keen on the juice that they come in! Once rinsed add them to a saucepan and boil on high for approximately 8 minutes. You want them to be nice and soft to mash.

Once the beans have cooked mash them in the saucepan until they have formed a puree texture. Then add 1 teaspoon of garlic puree, mixed herbs, cayenne pepper, 1 tablespoon of tomato puree, a pinch of chilli flakes and salt and pepper.

Mixed together until all ingredients are combined.

Then added the fried onion, pepper and carrot to the mashed beans and allow to cool before shaping the mixture into patties.

Place the patties onto a floured plate and coat them slighty to prevent them from sticking.

Cook the burgers on gas mark 6 for 40 minutes, flipping halfway.

I added some cheese, ketchup and French mustard to my bun. The recipe is very spicy so if you’re not a fan I’d suggest reducing/eliminating the cayenne pepper and chilli!
