I often cook roasted cauliflower but I fancied a change today and so I thought I would cook the cauliflower in some garlic butter. To make this you will need:
- 50g butter
- Vegetable oil
- 4 cloves of garlic
Preheat your oven to gas mark 6.
To begin melt the butter in a cup then add the whole cloves of garlic. Depending on the size of your cauliflower top up the butter mixture with some vegetable oil to ensure the mixture will coat the cauliflower.
Leave the garlic to infuse the butter mixture for approximately half an hour.
Place the cauliflower on top of some foil and drizzle over the butter, including the cloves of garlic.
Wrap the foil around the cauliflower and place in the oven for an hour. After an hour check to see whether the cauliflower has softened – this will depend on its size. if not pop back into the oven and check at regular intervals.
If the cauliflower has softened take it out of the foil and place it onto the baking tray to roast for half an hour.
We enjoyed this garlicy cauliflower with some roast potatoes and honey roasted vegetables. It’s definitely one to try if you want to impress with your Christmas Day roast!
